Upon further checking your site I was able to replicate the issue of not having the last sitemap i.e sitemap10.
I have gone ahead and flushed your sitemap and increased your limit for links within the sitemap to 501 and then saved these settings.
Your last sitemap is now being displayed (See screenshot: https://i.rankmath.com/lxk6w9) and you can go ahead and submit your sitemap on Search Console for further crawling.

The plugin itself is working fine. All the arrows point towards the cache issue, which I believe you must have a cache plugin installed on your website, and Hopefully, you have set an exception for the sitemap inside your cache plugin (if not already, please follow the link: https://rankmath.com/kb/exclude-sitemaps-from-caching/ )
Try to disable the cache plugin entirely and see if the issue persists.

I can see the fresh content inside your sitemap after flushing the cache. I waited 30 minutes and saw another four posts were included inside it. The issue seems to be resolved.
Just Post content on your website, wait for 20-30 minutes and re-check your sitemap.

It looks like your sitemap is still heavily cached considering it takes time to update. Could you please contact your host and see if there is any caching software (such as Cloudflare) installed on your server that is still caching your sitemap?

Sorry, I havnt installed or activated Cloudflare CDN for my site. So why this error?

In that case, you may also ask the host if there is any server-level caching software other than Cloudflare. By default, Rank Math’s sitemap files are not cached unless there is any plugin or server caching app including it.
I went ahead and checked your sitemap and it seems to be working fine now. It shows an updated URL.
