Please note that when you are logged into the site, the latest version of the sitemap will show, but in incognito mode it does not.

The post-sitemap.xml is not creating because you are splitting them based on settings at WordPress Dashboard > Rank Math > Sitemap Settings > Global Settings.
You instead have post-sitemap1.xml and post-sitemap2.xml
If any posts are not in the sitemap, let us know the URLs so we can check.

The initial error described above still stands as well – /post-sitemap1.xml has not updated since I switched to Rank Math.
A tool that I use to check for errors is still picking up /post-sitemap.xml, which incidentally has not updated since I switched to Rank Math either.

Yes as per the messages above, if I am logged in as an admin I see the updated version of the sitemap. But if I check in incognito mode, I see a version that has not been updated since I switched to rank math 2 months ago.
One of the tools that I use to check for errors is also picking up the old version of the sitemap, which makes me think that Google will also be seeing the outdated version.

I think I just fixed it since I am seeing the updated post sitemap in Incognito mode.
WP Rocket was caching the sitemaps (that is why logged user were able to see the updated) so I just added the following rules to WP Rocket:
After that I cleaned the cache and saved again the permalinks and everything seems to be working fine.
Could you check it?

Unfortunately the issue persists for me. When I first load it in incognito mode, I see the old version. If I do a hard refresh, I see the new version. If I do a normal refresh, I see the old version.
The same is happening on the .com version of the site that I included, which does not have WP Rocket running.
On the .com version of the site, there is no caching plugin installed at all.
I have just tried clearing the Cloudflare cache again and still the problem persists.
I have also completed a fresh install of the plugin on both sites, and the problem still persists.

Do you have a few URLs that you do not see in the sitemap? If not, how are you determining it is an old version?
Also, have you tried disabling the Sitemap module and enabling it again?
You could also try disabling Rank Math’s built in cache for sitemap by adding this code in the theme’s functions.php:
