The error is related to Jetpack. However, it indicates that you are exceeding the maximum response time from your server. Please make sure that your server has at least the following variables:
PHP Memory Limit: 512M
Max input time: 150
PHP time limit: 120
PHP max input variables: 1000
You can also get in touch with your host and ask them to increase the maximum response time limit for your site.

I have updated the recommended settings and tried again but experienced the same issue. Do you recommend deactivating the Jetpack plugin?

The critical error on your website is because your server resources are being exhausted while activating the Rank Math plugin.
This is the exact error message:
PHP Fatal error: Maximum execution time of 120 seconds exceeded [...]
To further expand on this, the error comes when WordPress tries to load all the options from your WordPress options table and since your website is quite extensive and with loads of plugins and data, the server can’t handle so many options at once.
