I was able to edit and save the meta description, as you can see in the screencast I attached in the Sensitive Data section. Could you give us more details about your issue and how to replicate it?
About the problem with Elementor, I was also able to replicate it (as you can see in the screencast) and it seems like it could be a conflict with a plugin.
To determine that, please follow this troubleshooting guide:

Please let us know if you find the culprit.
Only the site admin would know and your users won’t be affected by this troubleshooting.
