the plugin is really great, but for me this is a big problem as the site will soon be included in google news and the time of publication is important.

Sorry, but as I mentioned, the time is exactly the same. We use the GMT zone so the time is the same when converted to +2:00.

I don’t think it’s the same thing, there is a time zone because every country has its own time.
If I publish an article at 8:00 am in Italy it actually turns out that the article was published at 6:00 am precisely because the plugin does not calculate the Italian time zone which has a difference of two hours.
When the plugin is deactivated the publication time becomes correct and also in the structured data the +2:00 appears.
The site will soon go into google news and it is very important that the time is correct.

Please check the time printed carefully.
If you use +2:00 hours, the time printed is going to be:
07:44:00+02:00
If you use the GMT (like we do with Rank Math), the time printed is going to be:
05:44:00+00:00
When you convert the time, it is going to be exactly the same.
