The start ratings cannot be applied to the Article Schema but they can be applied to the Software Schema.
As for the data you put on each field that is entirely up to you and the specificities of each page so you are in a better position to assess those values.

2. Schemas like the WoCommerce Product Schema updates automatically based on the user entered reviews, but in other Schemas like Book, Software, etc., you need to enter the reviews manually.
We also add the Author URL in the Review Schema indicating that the review is added by the Author.
3. Depending on the contents of pages, different Schemas can be used. But in general, the default Article Schema should be fine.

You will have to add the author review manually to the Software Schema by editing the Schema on your posts:
If you want to add the user reviews then you will have to get in touch with the support of the plugin that you are using to collect the user reviews and share this filter with them to convert the reviews into the Schema ready content: https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data
And you don’t have to use Article Schema to the homepage, about us, and contact us pages as our plugin adds the default Schemas to them. You just need to enter the details about your website in WP Dashboard > Rank Math > Titles & Meta > LocalSEO.

The default Schemas are applied automatically, you don’t need to add them manually. And Local SEO module can be used to enter the details for your site. Even if your site is not a local business, still you can enter the details there to add them to Schema.
And if an article is about a software/game then you can use the Software Schema for it. It is a suitable Schema even if you are not selling the games.
