I’m experiencing the same issue. I’ve migrated from another plugin (following the migration from yoast wizard steps) in order to solve this issue. But it seems that I’m experiencing the same.
I’m not able to edit the existing products or create new products using woocommerce plugin (last version 4.8.0 is installed. WordPress 5.6 is installed). After investigating the issue. I’ve got a http 500 error every time I click “edit” on edy product or even create new.
I’m using version 6.9 of Stockholm theme.

@Hygiene For All, I checked your site and the issue seems to come up when your theme is activated, check the screencast I have added in the sensitive section. Activating your theme with Rank math seems to load a 500 error in the product page console which I believe is the reason you are unable to edit.
Since 500 errors are usually server related, I request that you get in touch with your server support to check if the related error has been logged in the server log and if there is something that can relay the cause. It might be even due to some server limitations in terms of memory to the site.
