I checked the sitemap, it is returning a blank page.
Please follow these steps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Once done, clear your website cache and check the sitemap.
If it loads in the browser, resubmit the sitemap in the Search Console.
Also, note that the couldn’t fetch error, is in most cases simply due to a bug in the Search Console.

Thank you so much for the quick response and help! I went through your steps. I think it worked! In GSC I have 3 “domains.” I have
herbivoremuscle.com
https://herbivoremuscle.com
https://www.herbivoremuscle.com
I have no idea why I have 3. I read a bit and some people say you should have 4?
The sitemap fetched for the last one of the list above. It won’t fetch for the first, and for the second it says that the sitemap I tried to submit is not a supported pathway.
Does any of that matter?
Finally, now that things are fetching on the www from the list above, I tried to check some of my URLs. I’m getting URL is on Google, but with “indexed, not submitted in sitemap.” Do I need to do anything with that, or will that fix at some point to just being “indexed”?.

I tested your sitemap, it is loading fine on my end. Also, I tested using the XML Sitemap Validator tool and it did not detect any issues.
indexed, not submitted in sitemap is not an error, it just means Google found out about these URLs through internal links or backlinks. They are already indexed by Google hence you don’t need to worry about them. Hopefully, this message will disappear over time.
