Thanks for the additional info.
It looks like you are using the Google sitemaps generator plugin and not Rank Math to generate your sitemap. Please note that our plugin does not add the priority value on the sitemap entries, this is an optional parameter.

At the moment, I can suggest that you disable the sitemaps module and install the Google XML plugin to get this feature.
