Sorry for the issue you are facing.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Please let me know if you find the culprit.
Only the site admin would know and your users won’t be affected by this troubleshooting.

When just WooCommerce + Your Theme + Rank Math is enabled, the sitemap is working fine:
https://i.rankmath.com/TJfzfv
That means, some other plugin on your website is breaking the sitemap.
Please go through my instructions once again to find the problematic plugin:

Todd what have you done?!!! since you entered mý site it is down and i cant put it right again. Damn, i have one paid advertesiment run today and all my costumers are sent to a site error.
Todd when you leave you left one plugin activated that was causing the system down, i believe that you were trying to help so i´m sorry for my previous post Now that problem is solved i will search the the plugin that causes the sitemap error.
