I tested your sitemap with the XML Sitemap Validator and it does not detect any issues.
Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, delete all your sitemaps from Google Search Console resubmit only the sitemap_index.xml.
That should fix the issue. Please let me know if that does not. We are here to assist.

I checked your robots.txt file and it seems to be loading and configured correctly:
Please clear your websiteās cache including any server-level caching software that might be still caching the entire site.
Also, try applying this filter code into your theme’s functions.php file to completely remove Rank Math’s sitemap file from caching.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
After doing all that, give Google some time to recrawl your website and see if the error in your GSC goes away.

The sitemaps shouldn’t be submitted in the URL Inspection Tool as they are set to noindex to prevent them from indexing in the SERPs. You should submit the sitemap_index.xml in the sitemap section of your GSC account and Google will crawl and discover the URLs inside it.
And your robots.txt is working fine and Googlebot is able to access it without any issues. If the issue persists then you should get in touch with your host and ask them to make sure that there are no server errors that are stopping Google from accessing your robots.txt file.
