I am afraid that this is not a known problem and it is likely that your server configuration is affecting this. What happens when you update the plugin is that the local sitemap cache that is saved in the plugin’s folder is deleted which is likely what is causing this issue.
I can suggest that you head over to Rank Math > Status & Tools > Auto update and disable this so that the plugin does not automatically update and affect your ranking. You can then control the update process and test the sitemap file.
