For initial troubleshooting please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server.
After that, remove all the sitemaps from your GSC account and submit only your main sitemap.(/sitemap_index.xml).
Once done, clear your website’s and server cache (if any) and wait for Google to crawl it again.
If that doesn’t help, please share the affected sitemap URL with us so we can check further.

When caching is enabled, the sitemap of your website ends up being cached as well. You can follow this guide to exclude the sitemaps from caching in your caching plugin:
