Do you also have a hosting caching app such as Cloudflare? If you do, please clear the cache and see if the issue persists.

Our cache is W3 Total Cache but I’m tempted to remove it as I’m not sure it really helps! 🙂 I did add those exceptions to W3 Total Cache that you recommended on another support page and I’ve also flushed the sitemaps.

I’ve checked your sitemap and it seems to be heavily cached by your host/server. You may need to check with them and possibly ask them to add the sitemap file to the no-cache list.

hi again, I don’t have an option to change the number of links per sitemap from 200 to 201 either?

You can actually change it under Rank Math > Sitemap Settings > General and find the “Links Per Sitemap” setting. Is it not working on your end?
If the issue persists on your end, we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.
