We have not yet added support for video sitemap but Video schema markup is available in the plugin.
Please note that you can disable the sitemap module via Rank Math > Dashboard and make use of a third party tool that offers the video sitemaps.

No, we cannot create a video sitemap.
You can create one manually or use some other plugin to create video sitemaps:

In the meantime, we are working on that functionality and should have it ready very soon.
