Since you have caching enabled on your site, please exclude all your sitemap URLs from being cached. You can do this in WP Rocket by heading to WordPress Dashboard > Settings > WP Rocket > Advanced Rules and add the following in the filed for URLs to never cache: (.*)sitemap(.*)
Once done you should clear your cache then do the following:
1. Head over to WordPress Dashboard > Settings > Permalinks
Hit the save button once.
2. Go to WordPress Dashboard > Rank Math > Sitemap Settings
Hit the save button once.
That should fix the issue.
