Three variations of the sitemap are returning 200 status, you can check using https://httpstatus.io/:

Please ensure that only 1 version of the sitemap is working (200 status), and the rest are redirecting to it.
Please follow the steps in this link:
https://rankmath.com/kb/couldnt-fetch-error-google-search-console/#num-5-4-redirect-all-three-other-versions-to-your-preferred-variation and redirect to the correct version.
Once done, clear your website cache and resubmit the sitemap in the Search Console.

I tried this and it didn’t work. The site itself already has redirects in place at domain level so I don’t know why it hasn’t been applied to the sitemap url?
Do you know if there’s anything else I can try?
If not i’ll have to go back to Yoast

I’ve checked your sitemap versions, and they are still showing 200 status like the screenshot provided in the sensitive data section. You can get in touch with your web host for assistance in redirecting your whole site to its final version.
Also, it seems that you’re not using Rank Math anymore for your site as your sitemaps are already generated by Yoast.
