We are having the same problem with our site https://thepdcafe.com.
As a result loads of our pages are losing their rankings on Google.
The RankMath plugin is really great, but we need our sitemaps to be found and our pages indexed as a matter of urgency!

This looks like a duplicate ticket, your sitemap file is loading fine when I check your site. Could you please disable any caching plugins that you have one your end and check if the issue will be resolved?
Please note that it is also possible to disable the Rank Math sitemap module via Rank Math > Dashboard and install a third party plugin such as this one https://wordpress.org/plugins/google-sitemap-generator/ to handle your sitemaps.

I have not seen any plugins that uses this type of sitemap except your plugin and yoest, an I can change or over ride it

No we do not have an option to change the sitemap URL. Please note that sitemap index URL does not really matter since the Google search console is not specific on the URL that should be used. Both the sitemap.xml and sitemap_index.xml should work just fine.
