Thank you for contacting Rank Math and sorry for any inconvenience that might have been caused due to that.
Rank Math will also generate a local cached version of the sitemap in the plugin’s directory. Could you please delete the plugin and perform a fresh install and then clear your site cache and check if the links will be updated?
Please note that you need to set a page to noindex to remove it from the sitemap.

deleted the plugin and reinstalled and activated.
The pages XML is still 2 months old

All the pages listed in your page-sitemap are opening for me. I do not see any deleted pages bring included in the sitemap file.
Please note that the last modified data column is for the update time/date of the individual pages – not the sitemap itself.
Can you link us to a page that you deleted but it is still appearing in the sitemap?
you are correct, it is weird the content is now updated, but the modified date has not changed.
