We might need to take a closer look at the settings. Please edit the first post on this ticket and include your WP logins in the designated Sensitive Data section.

I cannot spot any inconsistency in the data that is returned by Rank Math on your site.
Here is an example post showing the publish date:
This is the OG meta returned by Rank Math:
Please note that Rank Math does not add the post date on the meta description and there has to be another plugin that is affecting this date.
Could you please publish the next post when all other third party plugins are deactivated and let us know if the error is still experienced?

I did some follow up and with the release of WP 5.3, there are some changes in how WP deals with date and time.
Kindly confirm if the published date is actually the GMT time.

I have been testing on the issue on my end as well and this concern in the publish date and time seems to only occur with the latest version of WP.

The difference is after the WP update. There is a 6 hours difference.

There is one update from my end. Every day at least one post has a correct time usually between 6 PM to 9 PM (+5:30) (6 PM to 9 PM is the time when I publish any new article and it is posted with the correct time.)
