The filter provided by my colleague is the code to allow shortcode in meta. This will allow the shortcode in short description to display the content in the meta description in the front end.
The filter you are using is different as it is to allow shotrcodes in product schema description. Please note the difference and make the necessary changes
If that still doesn’t work, it might seem to be an issue with your shortcode. You can test it without Rank math and use php to echo 'short description: '.$product->post-excerpt; and see if it displays correctly.
