Choosing ‘small business site’ or ‘other business site’ doesn’t make much of a difference on your settings on your site schema. It just a setting to tell Rank math what your site is on. You can refer more about this here: https://rankmath.com/kb/how-to-setup/#your-website-is
As for your business type, this is where you can be a bit more specific. Since what you are offering is a Service, professional service would do just fine. If you aren’t sure, you can use Organization or Local Business which are a bit general.
