Snippet specifies a maximum text-length, in characters, of a snippet for your page. (if set as -1, it will show as much as possible).
Video Preview specifies a maximum duration in seconds of an animated video preview (again, -1 means no limit).
Finally, Image Preview specifies a maximum size of image preview to be shown for images on this page (with -1 as no limit).
Usually, it is fine as they are by default.

What would happen if I change f.ex. the setting regarding text length? Do you have an example?

Hello,
You would just set the maximum length Google (and other search engines) can show. Let’s say it is 175 characters and you set it 178. Google will show just 175 but other search engines with longer meta descriptions could display the 178 characters.
Let’s take another example, let’s say you set it as 30. Well, no matter what you type in your meta descriptions, Google will display only 30 characters, no more.
