I think I found the culprit. Some months back I moved the site from an older server environment at our hosting company. It had some old php settings in .htaccess. I increased php_value max_input_vars from 300 to 3000 and now it works. I have to open and re-save the pages for the score to appear in the page listing, but that is totally ok.
I had another problem with not being able to save the Local SEO page, and that went away too.
So, not your fault. I beg your pardon for the time you have invested in this problem.
Perhaps this experience could come handy for someone else (let’s hope so). The max_input_vars variable has an effect on Elementor too, so I have dealt with it before. A shame (for you) I didn’t think about that earlier.
So, now to try to fix the problem with Google Search Console whining about the product categories … I have read some in different threads, so I’ll not complain to you for now. Question: there seems to be some delay, perhaps days, before Google Search Console reloads the sitemap and decides if I managed to rectify the errors … that makes it harder to come to grips with Rank Maths settings for product categories and scheman and that … well well.

I am so glad it is all working fine now.
There is always going to be delays with the “Validate Fix” since Google follows a particular schedule for checking those.
