Please do a hard refresh on your browser to clear any cached JS/ data on your end. You could also test this out from a different device and let me know if you can replicate the behavior.

Using Chrome browser
Cleared all cached items and yes all worked showing SEO Analysis BUT THEN
Could not update entries on the summary page and when I refreshed the page the same server 500 error. Cleared the cache again and restarted browser cleared cache and attempted analysis and the same problem persists

We have fixed the issue for you. Please check.
We dropped the rank_math_seo_analysis_results
option from your DB and that fixed the problem.
We will introduce a solution for that in the next update.
