Could you please check if your site is actually indexed. The sitemap might be crawled and your pages not yet indexed, still on queue.
If they are indexed, please click on refresh sitemaps and let us know if the issue persists.

How do I do that? I was under the impression that once the sitemaps were crawled, pages would be indexed!

Ok, I think you are talking about the coverage. I went to Coverage -> Submitted and indexed and I see 35 pages in there.

Yes. Initially, the list was empty. After clicking refresh, I saw the sitemaps but with 0 indexed items.

Your site seem to be indexed just fine.
Could you please do the following:
1. Remove the sitemap in your GSC, then head over to Rank math > Search Console and refresh your sitemaps.
2. If refreshing sitemap shows no sitemap submitted, then your search console is updating fine else it might be taking in cached data.
3. You can then resubmit your sitemap in GSC.
Please note that the data shown under Rank math Search Console is usually taken from GSC through a Google API. Since your site is being indexed without issue, you can safely ignore the sitemap issue in Rank math Search Console.
You can also use the Official Site kit plugin by Google, just disable the Search Console module in Rank math dashboard. In the mean time our team is working on a Revamped version of the Search Console, and we will let you know when the release is made.

Ok, yeah, I followed your instructions, after deleting sitemap from GSC and refreshed from RankMath, it showed no sitemaps, so I resubmitted them.
