You seem to be using another schema plugin on your site. This is the plugin generating the data related to your product category given all schema by Rank math is removed from product categories once you have enabled the remove snippet option(which you have) in Rank math > Titles & Meta

thank you for your reply. I don’t use another schema plugin. Does it counts that i have migrate from Yoast to Rank math? Is it possible for Rank Math import some adjustments from Yoast that are not the optimum for my eshop?
Is this the adjustment you are talking about(I have attach an image)? Should i turn this off?
Please let me know if i need to proceed in any further action in order make it work properly.

Disabling the extra schema plugin seems to have worked to remove the schema from your product categories.
I have tested and previewed your site URL and Google seems to be reading the correct image. Please check the screenshot I have attached in the sensitive section.
