Although the information you have added to your software schema headline should be suitable enough, the rating is usually taken from aggregateRating property while the review name will be taken from the author property for the review property.
As for the pricing, it is fine to leave that empty as it is only optional.

Your Schema title inherits the variable %seo_title% and the description should show %seo_description% – this will ensure your SEO title and SEO Description that you set up via Rank Math can also be used for your Schema details.
While the %title% variable will display the title of the current post or page, we don’t use

The code you’re using is correct. Please share the affected URL/s so we can check as well.
Regarding the schema, please note that Google recommends that you must show all of the data visible in the schema code on the frontend, you can achieve that automatically by pasting the shortcode on your content.
However, if you wanted to remove the star rating on your content coming from the Rank Math schema, then you should choose the “Custom (use shortcode)” option upon editing the software schema:

One of the most prominent ways (in our experience), is the date shown by the theme on the page. Google usually picks and shows the date they see in the content itself and show it in the SERPs. Meaning, that if you have a visible date on your content, that will be picked up by Google and displayed beside the snippets.
Regarding the schema data showing on your page, it is not customizable as that fetches the data automatically from your schema.
You can choose not to use/paste the shortcode upon selecting the Custom (use shortcode) in the schema editor, and use your page editor/builder to show the schema on your content.
In that way, you can customize the data you wanted to show on the front end (without image and star ratings).
