You can get more options if you change the Schema Type to others (like Product, Book, Recipe…).
But if you are looking for snippets like the How-To block, you can find them by adding a new block to the post and there looking for the Rank Math category, as I show you in the following screencast: https://i.rankmath.com/whnt7J

I want rich snippet option for my blog post. I can see This plugin supports Schema type Article. Why the Rich Snippet option is not visible?. Is the plugin configured correctly?

Since it is the way to change the Article Schema using Rank Math and that option should be working for you (and it should also be valid for Google).

Yes that option is working for me but when I test google rich-result for schema type article. I get below errors for my every article that I try to test? Is it configuration issue?

I think the error is more about the tool. It says “Page not eligible for rich results known by this test” and also “Not all rich results and error types are supported yet.” so it seems that the tool being in beta is not able to recognize all the rich snippets, but no that there is an error in your pages.

As my colleague noted earlier, the rich results test you are using is still in its beta stages and not all rich results and error types are supported yet.Results are not guaranteed to be accurate, or to guarantee appearance in search results. See the supported Types here.
