Rank Math only contains an option to add author ratings. You will need to install a third party plugin to collect and submit user ratings. You can use KK star rating or the following plugin: https://wordpress.org/plugins/wp-review/

Hello, I’m also looking for a way to let my visitors rate my blog post (article).
Is it possible with the wp-review plugin from MyThemeShop to just show the star rating (which any visitor can rate once) somewhere in my blog post via a shortcode or something?
If this is possible: For GDPR/DSGVO reasons I would like to know if your plugin (wp-review) does store data from my visitors (IP address..) and for how long?
I switched from SEOPress to RankMath and I really like it so far. I used Schema Pro to display the star rating (and give my users the possibility to rate my blog posts anonymously). Unfortunately, I can’t or shouldn’t use Schema Pro together with RankMath (it deactivates Schema Pro automatically)?

That can be done using the WP Review Pro.
The plugin is GDPR compliant so there is no much you have to worry about.
We do not deactivate any plugin automatically. We only recommend that you use only one plugin for schema (or anything else that Rank Math does as well).
If you do wish to use any other plugin like the Schema Pro, make sure you disable Rich Snippets in Rank Math at WordPress Dashboard > Rank Math > Dashboard.
