The sitemap is not generated by Rank Math, it looks like there is a sitemap file in the root directory or some other plugin is generating the sitemap.
If you are using any other sitemap plugin, please disable that.
If you are not using any other plugin, please remove the sitemap files from the website’s root directory. Once you delete the file, Rank Math will generate the sitemap.
Once the Rank Math sitemap is active, clear your website cache and resubmit the sitemap in the Search Console.

I don’t have sitemap in my root directory and also don’t have any plugin for that.

You can add this filter to exclude the sitemaps from caching:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

Once done, clear your website cache and check the sitemap.

We tried enabling troubleshooting mode to check if there are other plugins or your currently active theme that is causing this issue with your sitemap but the sitemap is still displaying a different XML format.
There is also no available physical XML file in the root directory of the website.
You can only see our sitemap when we access the non-cached version of it.
Kindly contact your hosting provider if you have any other server-level caching services that may be causing this issue and ask them to clear any caches of your website.
