If the canonical get added, please also enable all other plugins and check again. If it remains fixed, your theme is causing a conflict. In that case, you can reach out to the support of your theme as they would be in a better position to assist you.
If in case the canonical gets removed in the above process, you can continue following the above guide to determine the source of the conflict.

I don’t know what to say: now it works.
I’ve changed the theme, disabled all the plugins and the canonical was working.
I’ve activated the theme back, still all the plugin disabled, the canonical worked.
Activated all the plugins except rankmath, the canonical worked.
Activated rankmath and the canonical was gone.
Now, before doing some other tests, the canonical is there.
It’s disturbing, but in the end it’s solved.
