When you have Rank Math enabled, in posts and products, you can choose more than one category and then set one as primary.
Using the first option you show there, you will make the breadcrumbs display the primary category instead of the first category the theme gets (which could be or maybe not the primary category).
About the second one, I am not really sure, since it might be about how Rank Math breadcrumbs are displayed on that theme.

Hello Alberto – and thanks for your reply! It does make sense from UX experience but in your opinion, could this feature (showing different breadcrumb paths for the same post/page/product) be harmful for SEO by confusing Google Bot and making it think this is duplicate content? Or is it OK as long as canonical URLs are set up properly?

It is ok meanwhile you set the canonical since it will avoid Google thinking it is duplicate content.
