You can add a date 5 years down the line. Unfortunately, it is required by Google if you want to get rid of the warning of you mentioned in your OP. Or, you can simply ignore it if you don’t want to add a validity to the price 🙂

No this will not affect your rankings since having structured data does not entirely boost your rankings but having a featured snippet will improve your click through rates and drive more traffic.

Since it is just a warning, it won’t have any effect on your rich snippets: 
Errors are what might cause an issue and you can ignore the warnings.
With that said, ideally you do not want any warnings either but since there is no workaround (you do not want to have a priceValidUntil field), you can safely ignore that.
