Thanks for the follow up.
There appears to be some sort of conflict with theme code that is causing and we will need to investigate further.
I have temporarily disabled the Rank Math breadcrumbs on inc/breadcumbs.php and I will be testing further from my local test site and then get back to you.

For Breadcrumbs to show category, you need to first set it in Dashboard >> Rank Math >> Titles & Meta Settings >> Product >> Primary Taxonomy. I selected Product categories in the Primary Taxonomy option of Product and I also added the Rank Math breadcrumb code back in breadcrumbs.php which my colleague removed yesterday.
And to show the parent category in Breadcrumbs I enabled Show Category option in Dashboard >> Rank Math >> General Settings >> Breadcrumbs.
