While thoroughly investigating your issue, I noticed that you are using both Yoast and Rank Math on your site. Therefore, it seems to be an issue of plugin conflict.
Here is a confirmed list of SEO plugins that conflict with Rank Math:

In this situation, I’d like to suggest you try disabling Yoast, clearing the caches from your site, and changing the canonical URL again.

I deleted yoast, and confirmed I do not have any conflict plugins installed, but the issue still exists,please help

There is a conflict between Rank Math and your theme or one of your plugins. To confirm this, I installed the Health Check and Troubleshooting plugin and activated troubleshooting mode with only Rank Math active. The follow settings changes were being saved while in troubleshooting mode.
