Please note that Google crawls the sitemap and website according to the crawl budget of the website. It is possible that the crawl budget for your website is exhausted and Google is not able to discover the URLs within your sitemap.
Please follow the below steps and see if that fixes the issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. Clear your browser and website’s cache.
4. Once done, resubmit the sitemap_index.xml and wait for Google to recrawl the sitemap.
