Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

Only the site admin would know and your users won’t be affected by this troubleshooting.

I went through the whole process and still the post will not appear in the sitemap. No Theme/Plugin clashes were found.

I can see that the post is appearing fine in your example.com/post-sitemap.xml file.
How are you checking whether the post is present or not:?
I’m going to that exact address and it is not there, one on a similar topic is but that one is not.
I have 2 posts that should be in there however there is only 1 post and the homepage.
