Rank Math only shows the data that is important and actionable. We do not store all the data that comes from Google Analytics, as no matter what, Google Analytics can show much more data compared to any Analytics plugin.
We would recommend keeping the two plugins on for some time but do not install the Google Analytics code using Rank Math for now.
Wait till the Pro version comes out so you can compare both the plugins and then decide.

Thank you for the reply – I think I may have verified my account again with Google as that is what the plugin requested me to do – so have I now messed things up by technically by default installing the plugin with the Google analytics code by default because I did what the plugin asked me to do?
Or will the Analytics code only come into play with the Pro-version – if I am not ready to go pro then I just ignore that prompt when it comes round?

You do not need to enable it if you have already added the Analytics code on your website.
Connecting the Rank Math app to your Google Analytics and installing the Google Analytics code are completely different things.
If you have your account connected with the Rank Math app, that will suffice when the Pro version comes out.
The plugin will be able to show the useful data in your WordPress dashboard.
