Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Apply the following filter code to your site.
add_filter( ‘rank_math/sitemap/enable_caching’, ‘__return_false’);

If you still see a “couldn’t fetch” error on the Google Search Console, you can try removing and resubmitting your sitemaps to Google Search Console. This may clear the errors and refresh the status of your sitemap. Here are the steps to do that:
Go to Google Search Console and log in to your account.
Select your website from the property list.
Go to Sitemaps on the left menu.
Select your sitemap from the list and click on More Actions > Remove Sitemap.
Please wait a few minutes and then resubmit your sitemap by entering its URL and clicking Submit. https://rankmath.com/kb/couldnt-fetch-error-google-search-console/
Please let us know if this helps.
Thank you.
