I checked your sitemaps and I was able to replicate the issue.
I found that your sitemaps were getting cached so I flushed the Sitemap cache by following this video screencast:

I also excluded the Sitemap files of the Rank Math plugin in your caching plugin (WP Rocket). I followed this tutorial guide to exclude the sitemaps from getting cached: https://rankmath.com/kb/exclude-sitemaps-from-caching/#wp-rocket
Your sitemap is now updated and is displaying the posts accordingly.
