The Product Schema doesn’t support the keywords property and as such it doesn’t get added to the Schema markup.
Only the Article Schema supports that and we add it when that type is present on the page.

About your second question, if you should change the product Schema of the one you are currently selling to Article Schema, we would say no too, only the actual blog posts should have the Article Schema.
Adding structured data (product schema) is always a good idea. However, an incorrect implementation can lead to a manual action. A loss of rankings is a high price to pay for not paying attention to details.
