For example you can test with the resarch “IFSO”, the meta in Google is “L’Institut Formation Santé de l’Ouest (IFSO) est un organisme de formation associatif créé en 1973, dont le siège social est situé à Angers, dans le Maine-et- …”. Whereas, I changed my meta one month ago with an other sentence.

Google sometimes ignores the custom meta info altogether and shows something from the page’s content that matches the search intent better. In this case, the best you can do is optimize your meta description to try and match the intent of the search/keyword.
