The Strip Category Base option only redirects the URL with /category/category-name/post-name to /category-name/post-name. So even after enabling the Strip category base option, if /category/category-name/post-name URL is accessed, then it would automatically redirect to /category-name/post-name.
I suggest you carefully decide whether you want to use this option or not and only then proceed further, since changing the URL format multiple times might affect the SEO of your website.
