I’ve tried checking your sitemap, and it returns a page not found error. In this case, please follow the steps below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server.

Once your sitemap is already accessible, please remove all your submitted sitemaps and resubmit your main sitemap only /sitemap_index.xml and give Google some time to recrawl your site.

I still get this 404 error in the google search console “We encountered an error while trying to access your Sitemap. Please ensure that your Sitemap follows our guidelines and can be accessed at the location you provided, and then resubmit.”

I tested your sitemaps using the Sitemap Validator Tool and there were no issues found.
Please remove all your sitemaps from your Google Search Console account and submit only the main sitemap (your-website.com/sitemap_index.xml), and see if the issue is fixed.
