I have excluded all your sitemaps from being cached (it usually causes issues on GSC).
Could you remove all your sitemaps from GSC and only add sitemap_index.xml? After that, wat a little until Google crawls again the sitemap to see if the issue is solved.

I have tried to add in the WPCache the urls /fr/sitemap_index.xml, /de/sitemap_index.xml, /en/sitemap_index.xml too but that’s doesn’t work too. (I have WPML)

Your Sitemap seems to be loading fine.
Can you please delete all the Sitemaps from inside GSC and add only the following one?
sitemap_index.xml
Also, please stay advised that the Rank Math plugin does not generate different Sitemaps for different languages when using the WPML plugin.
Rank Math utilizes the hreflang method to pass on the translated pages to Google, which comes from the WPML plugin.
