Please note that the category sitemap can only work if you have actual categories which are assigned to at least one post.
If so, head over to Rank math > Titles & Meta > Categories and ensure you have not set them to noindex. Next head over to the individual categories and check to confirm they are also not set to NoIndex.

Also the category sitemap is working fine now!
Maybe it took extra time within wordpress to resolve the changes.
