The icon should be added as a favicon.ico file and then you must have something like this in the <head> section of your header.php.
<link rel=“shortcut icon” href=“https://example.com/favicon.ico” />
If your theme provides an option to add a favicon, please contact them to see if the favicon is correctly being added per Google’s standards.

Rank Math doesn’t have any options for Favicon so it is not possible for us to tell you why you aren’t seeing the favicon as we do not offer that feature.

The icon is usually the favicon which you can set through your theme as shown above.
The logo uploaded is usually used for your site schema data and to create your knowledge graph, here is an example of google news knowledge card with the logo: https://i.rankmath.com/C3yvzn
