The Strip Category Base option is only for the Category Archive URLs. Here’s a link for more information:

I’ve checked some of your category pages, and it seems that the category is already stripped. I’ve also attached links in the sensitive data section and please confirm if they are the links you are referring to.
If not, could you please provide the affected URL to further check?
