The issue is happening while using Elementor editor. With your method it’s working but I don’t want to proceed in this way as on pages I cannot see the score change and made the necessary amendements.

I tested on your homepage within Elementor and was able to replicate the issue. The updateMeta route is getting blocked by a firewall or conflict on your website (as many JavaScript errors are also present in the console). You can have a look at the screenshot in the sensitive data section of this ticket for a quick reference.
I tried to test for conflicts but the Health Check & Troubleshooting plugin is not working properly on your website. Please follow this guide to whitelist Rank Math in any firewall that you’re using and see if that fixes the issue: https://rankmath.com/kb/meta-data-not-saving/#firewall
In case that doesn’t help, we might need to manually disable the plugins and the theme to investigate further.
Alternatively, you can create a staging website and replicate the issue there and share its logins so that we can perform the troubleshooting there and your live website doesn’t get affected by the troubleshooting.

Unfortunately I did the mistake to buy Elementor Cloud hosting and and I’m just finding out that they do not provide any CPanel, neither a staging or many other feature. I’ll change hosting and try again and in case of need I will get back to you (but I’m sure I will not because I never had this kind of issues with other hosting providers).

Issue not solved, developers can’t whitelist or change firewall rules. I changed hosting in the meantime. I’ll let you know in case edits from Elementor editor are not taking place. thanks for your patience.
